Susanna Grassi cultivates vines and olive trees in Chianti, the wine-growing heart of Tuscany. The Casole property near Lamole (Greve in Chianti) has belonged to her family since 1600. Generation after generation the Grassi family has taken care of this land and these vineyards; in 2000 Susanna wanted to collect the spiritual inheritance and passion of her ancestors and be the first woman to take care of the property, giving life to the I Fabbri company.

The vineyards of I Fabbri are located at an altitude between 550 and 650 meters a.s.l. Part of the vineyards have their roots on beautiful centenary terraces, restored in 2002 and brought back to their former glory. Today they represent a magnificent natural amphitheater, in the heart of the Chianti Classico. The exposure of the vines is south, southwest: this allows the plants and grapes to enjoy the heat of the sun during the day, the same heat that is also accumulated by the dry stone walls and gradually released at night, helping the ripening of the grapes.

The philosophy of I Fabbri is to preserve natural resources and enhance the peculiarities of the territory. Typicality and tradition go hand in hand with less and less impacting techniques in the vineyard and in the cellar, with a view to natural wines that are a fascinating and genuine tale of Chianti Classico.
